Hydrolats, a by product of the aromatic plant distillation, can often be taken internally to help with various conditions and of course you can add them in sweets or beverages for extra aroma and flavour! Here’s a recipe for Indian Lassi:
Indian lassi is a real royal treatment for the stomach and delicious! Sweet or savoury, the method is simple: blitz yoghurt with your chosen flavouring, water and ice. Serves four.
- 600ml plain yoghurt
- 80g caster sugar (optional)
- 1 tbsp rose hydrolat
- Pinch of ground cardamom (optional)
- 200ml cold water
- 100g crushed ice cubes
Put the yoghurt, sugar, rose water, cardamom and water in the blender. Process for a minute, add the ice and process for a minute more. You can sprinkle saffron strands on top
